Microwave Brownies

Microwave brownies...what Mom and Dad make when the little kids go to bed... Remember the first time you were allowed to stay up and have microwave brownies? Or all the times you got up in the morning to find the glass pan in the sink?


How about all the times that we didn't eat them fast enough and they turned into rocks? :)



Microwave Brownies


1/2 cup margarine
6 Tbsp cocoa
1 cup sugar
1 egg
1 tsp vanilla
3/4 cup flour
1/2 tsp baking powder
1/4 tsp salt


In an 8x8 glass dish, microwave butter and cocoa 1 to 1 1/2 minutes, until butter is melted. Stir in sugar thoroughly. Add egg and vanilla. Add flour, baking powder, and salt and mix well. Microwave on high 5 to 6 minutes, rotating every few minutes (if microwave doesn't already rotate), until top is no longer wet.




Enjoy. Quickly. Before they turn into rocks.




Seriously.






And yes, I made these today. I couldn't help myself. They just sounded so good!

Fudge - what else would we start with?

I figured it was only appropriate that our first recipe posted was Mom's fudge recipes.  Even though I think we pretty much all have copies already, and probably won't want to make or eat any for several months after the amount consumed this Christmas... :)  But here it is:

4 1/2 cups sugar
1 12 oz. can evaporated milk
18 oz chocolate chips
1/2 lb margarine
1 Tbsp. vanilla

In a large saucepan, combine sugar and evaporated milk.  Bring to a boil, stirring constantly, and boil for 8 minutes. Add chocolate chips and margarine, and mix with an electric mixer until chocolate has melted.  Add vanilla.  Pour into a 9x13 pan and chill until set, about 3-4 hours.

Eat lots and lots. Yum.
